Im jealous of cities that have seasons. Its perpetually summer here. I miss cold weather and especially Fall. It’s the perfect weather to wear boots, hats, and coats. For someone who resides in a tropical paradise I admit to owning an embarrassing amount of coats and jackets. So when I start to see all these fall inspired recipes I don’t let our tropical weather get me down. I fire up the oven even when its 92 degrees outside. Its why someone some where invented central ac.
For me brownies are the perfect fall food that reminds me of potlucks, tailgates, and bake sales. They are easy to cut and serve to large groups and tend to be crowd pleasing for their familiarity. These brownie bars are a little over the top but so is my passion for Fall. The three layers all add their own flavor and texture really making these bars a special treat. These are rich and decadent but worth the effort. These could even be made as a one bowl brownie if you skip the double boiler and microwave your chocolate and butter together. Lining the cake pan also makes clean up a snap.
After traveling around parts of the continuous 48 states I do know that Chocolate Toffee Covered Macadamia Nuts are actually really common, but they are also available online. If you don’t feel like hunting then feel free to substitute skor bars with chopped macadamia nuts. For the crust I used our families recipe for Mac Nut Refrigerator Cookies but this is easily substituted for chessman cookies and chopped mac nuts.
