Chocolate Macadamia Nut Toffee Brownie Bars

Mac Nut Toffee Brownie BarsIm jealous of cities that have seasons. Its perpetually summer here. I miss cold weather and especially Fall. It’s the perfect weather to wear boots, hats, and coats. For someone who resides in a tropical paradise I admit to owning an embarrassing amount of coats and jackets. So when I start to see all these fall inspired recipes I don’t let our tropical weather get me down. I fire up the oven even when its 92 degrees outside. Its why someone some where invented central ac.

For me brownies are the perfect fall food that reminds me of potlucks, tailgates, and bake sales. They are easy to cut and serve to large groups and tend to be crowd pleasing for their familiarity. These brownie bars are a little over the top but so is my passion for Fall. The three layers all add their own flavor and texture really making these bars a special treat. These are rich and decadent but worth the effort. These could even be made as a one bowl brownie if you skip the double boiler and microwave your chocolate and butter together. Lining the cake pan also makes clean up a snap.

After  traveling around parts of the continuous 48 states I do know that Chocolate Toffee Covered Macadamia Nuts are actually really common, but they are also available online. If you don’t feel like hunting then feel free to substitute skor bars with chopped macadamia nuts. For the crust I used our families recipe for Mac Nut Refrigerator Cookies but this is easily substituted for chessman cookies and chopped mac nuts. Mac Nut Toffee Brownie Bars

Tasty and decadent three layer brownie bars. Chocolate toffee covered macadamia nut bits, fudge brownies, and cookie bar crust.

Ingredients
 5.50 oz Chopped Dark Chocolate
 1 cup Salted Butter
 4 Large Eggs
 1 ⅓ cups Sugar
 1 tsp Vanilla Bean Paste
 1 cup Cocoa Powder
 1 cup All Purpose Flour
 1 tsp Baking Powder
Cookie Crust
 3 cups Mac Nut Cookie Crumbs
  cup Melted Salted Butter
Chocolate Toffee Topping
 11.50 oz Chocolate Chips
 1 cup Chocolate Toffee Covered Macadamia Nut Bits

Method:

Preheat oven and line 9” x 13” pan with parchment paper.

Over a double boiler melt 1 cup of salted butter and chopped dark chocolate till smooth. While chocolate is melting whisk eggs, sugar, and vanilla paste in a separate bowl. When chocolate is smooth whisk chocolate butter mixture into the egg mixture.

In the same bowl add flour, cocoa, salt, baking powder into chocolate egg butter mixture. The mixture will be very thick. Be careful not to over mix. Set aside.

In the baking sheet toss cookie crumbs and melted butter together and press into pan to form crust. Pour brownie batter over crust mixture. Place in oven and bake for 25 – 28 minutes. The top of the brownies should be fluffy and almost cake like not crinkly. Take out of oven.

Pour mac nut toffee mixture on top of brownies. Cover with chocolate chips place back inside oven till chocolate chips are soft.

Remove from oven and spread chocolate to form the top layer. Chill brownies for about 30 – 45 minutes (depending on your fridge temp) till chocolate hardens on the top layer.
